Spiced Molasses Pound Cake


Ingredients

2 cups sifted cake flour 

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

¼ teaspoon ground cloves

¼ teaspoon freshly ground black pepper

8 tablespoons (1 stick) unsalted butter, at room temperature

½ cup sugar

2 extra-large eggs

½ cup blackstrap molasses (unsulfured)

2/3 cup whole milk


Instructions

Preheat the oven to 350°F. Grease a 9 by 5-inch loaf pan with butter. Lightly flour and set aside. 

Sift together the dry ingredients and set aside. 

Using a wooden spoon or a stand mixer fitted with the paddle attachment, cream together the butter and sugar. Add the eggs and beat until well incorporated. Stir in the molasses.

Mix half of the dry ingredients into the creamed mixture, then half of the milk. Repeat, incorporating all of the ingredients.

Pour the batter into the prepared pan and bake until a toothpick inserted into the center of the cake comes out clean, and the sides of the cake have pulled away from the edges of the pan, 40 to 50 minutes.

Cool for 15 minutes, then turn out onto a wire rack and let cool completely.
