Roasted Garlic Carrot Mash


Ingredients:

2 tablespoons unsalted butter

½ cup finely diced onion

1½ pounds carrots, peeled, trimmed, and cut crosswise into thin slices

1 cup chicken stock or canned nonfat, low-sodium chicken broth

4 cloves roasted garlic

Salt and pepper


Instructions

Preheat the oven to 375°F.

Heat the butter in a heavy-bottomed saucepan with a lid over medium-low heat. Add

the onion and cook, stirring occasionally, for 3 minutes. Stir in the carrots and season

with salt and pepper. Cook, stirring occasionally, for about 10 minutes or just until the

carrots are starting to color. Add the stock and garlic, cover, and braise in the oven for

about 20 minutes or until the carrots are very tender.

Using a potato masher, vigorously mash the carrots; they don’t have to be super-

smooth. Taste and, if necessary, season with salt and pepper.

Serve with any grilled or roasted meat or poultry.
