7 each whole bulb onions with greens, 2" round, cut in half
8-10 each carrots, 1" mature fresh market carrots with greens, peeled, whole, large dice
2 T olive oil
4 T white balsamic vinegar
to taste salt and pepper
Toss halved-onion bulbs and diced carrots in olive oil and balsamic vinegar. Season with salt and pepper. Layer vegetables in bottom of shallow roasting pan.
Cook vegetables in preheated 375F oven for 35-40 minutes or until desired doneness.
