2 oz Amaras Mezcal
1/2 oz Bechorovka
1/2 oz Pierre-Ferrand Dry Orange Curacao
1/2 oz Dolin Dry Vermouth
5 oz Chipotle Chocolate Horchata (See below for recipe)

Chipotle Chocolate Horchata Recipe
5 cups unsweetened Rice Milk
1/2 cup unsweetened Almond Milk
1/2 tablespoon Vanilla Extract
2/3 cup white sugar
2 cinnamon sticks
1 teaspoon smoked paprika
1 1/4 teaspoon chipotle powder
3oz Ibarra Mexican Sweet Chocolate (chopped or pulsed in a grinder)

Combine all ingredients (excepting the chocolate) and leave to infuse for a minimum of 3 hours. Strain off the liquid through a coffee filter or cheese cloth to remove cinnamon sticks and lumps of seasoning. Warm over medium heat and stir in the chopped chocolate, stirring until all chocolate has melted. Use desired quantitiy of horchata per ratio to spirits. Measure out horchata and add cocktail ingredients, stirring to combine. Serve in glass mugs with spiced whipped cream and/or a chocolate crisp.

Cinnamon Spiced Whipped Cream
2 cups chilled heavy cream
2 tablespoons powdered sugar
1/2 teaspoon ground cinnamon

Add the sugar and cinnamon to the heavy cream and stir to ensure that the sugar has completely dissolved. Add a dollop on each drink.
