Yields 20 Cookies


  • 1 cup (2 sticks) butter, room temperature
  • 1 2/3 cup Sugar
  • 1 Egg
  • 3 cups plus 3 tablespoons All Purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder


In a large bowl, cream butter and sugar together until light and fluffy. Once lightened in color, mix in the egg, scraping the sides of the bowl as needed. Set aside.

In another large bowl, sift together the flour, baking powder, and baking soda. Add half the dry mixture to the wet mixture, stirring to combine. Add the remaining dry mixture and ensure all component are fully integrated, yielding a smooth mixture. Using an ice cream scoop or two spoons, scoop the cookies onto a parchment-lined baking sheet. Allow to chill in the fridge while the oven pre-heats to 350 F. Bake the cookies for about ten minutes, or until light golden brown at the edges.
