with a super food vinaigrette
Serves Four

½ Pint Cherry Tomatoes, Cut In Half
½ Pint Figs Cut Into Quarters
1 Apple Cored And Diced (Your Choice of Apple)
1 Bunch Breakfast Radish Or Rainbow Radishes, Sliced Thinly
1 Tbsp Chopped Chives
1 Sphere Of Fresh Mozzarella, Cut into Bite-Sized Pieces
Salt and Pepper To Taste
½ Cup of Super Food Vinaigrette (recipe below)

Super Food Vinaigrette
½ Cup Apple Cider Vinegar
½ Cup Liquid Amino Acids
½ Cup Lemon Juice
½ Cup Local Honey
¼ Cup Flax Seed Oil
¼ Cup Extra Virgin Olive Oil

Prepare all the salad ingredients, cleaning and drying all vegetables thoroughly before chopping. Mix together and set aside. Add all vinaigrette ingredients in a blender and blend on high until fully combined. In a large bowl, spoon a ¼ cup of dressing into the bottom and add the salad ingredients. Toss to coat. Add more dressing as desired. Salt and pepper to taste.
