Celebratory and special occasions are the perfect time to enjoy sparkling wine. Our own Aureole Cuvée by Iron Horse is a refreshing sparkler which can be enjoyed as an aperitif or paired with many different dishes during the holidays or any day of the year. A blend of Pinot Noir and Chardonnay, this sparkling cuvée is refreshing as an aperitif and complex enough with great acidity to complement rich foods. Notes of Gala apples and freshly baked brioche on the nose and honey-baked Bosc pear flavors on the palate envelop a clean, refreshing finish making it a great wine for pairing with food. I love pairing it with umami-rich foods like mushroom risotto and pork chops, particularly when paired with apples to bring out the fresh apple notes in the wine. I especially enjoy Aureole Cuvée with our Maine Lobster Salad as it balances the sweet, salty and savory flavors and enhances the celebration of the holidays.
