The Dough

  • 4 1/2 cups bread flour
  • 4 tablespoons sugar
  • 3 tablespoons baking powder
  • 1 tablespoon of salt
  • 8 tablespoons of cold butter diced
  • 3 1/2 cups heavy cream

Combine all the dry ingredients in a bowl. Using your hand, rub the diced butter into the flour mixture, using your forefingers, being careful not to overwork the butter or melt it. Once the butter is in peasized crumbles, add the cream, using your fingers to rake it through. Set aside in a cool place. 

Apple Cobbler Filling

4 pounds of diced apples
3/4 cup of corn starch
1/2 cup of sugar
1/2 cup of honey
1 vanilla bean, scraped
1/2 tsp of cinnamon powder
1/4 tsp ginger powder
Zest of 1 orange 

In a heavy bottom pot, mix all the dry ingredients and add the honey. Add in the apples and flavorings, and stir to combine. Let sit for at least half an hour. Cook the mixture over medium heat until the apples are tender and can easily be punctured with a fork. Pour into your baking pan or small dishes and drop clumps of the dough on the apples. Bake in a pre-heated oven (375 F) for 15 minutes, until the dough is fully cooked. Serve with ice cream.
