- 3 Pounds Gala Apples, Peeled, Cored and Chopped Into 1/2'” Pieces
- 2 ½ Cup Granulated Sugar
- 1/2 Cup Lemon Juice
- 1/4 Cup Brandy
- 1 Teaspoon Ground Cinnamon
- 1/2 Cup Golden Raisins
- 1 Teaspoon Salt, Divded Into Two ½ Tsp
- 4 Cups Flour
- 1 Cup Almond Flour
- 1 ½ Cups Unsalted Butter, Cut Into ½” Cubes
Preheat oven to 375 degrees
In a large pot over medium high heat, mix together the apples, sugar, lemon juice, brandy, cinnamon, raisins and ½ tsp salt. Cook apples over medium-high heat, occasionally stirring, until juices are deep golden and bubbling, 20 to 25 minutes.
Line a ½ sheet pan with parchment paper. In the bowl of a stand mixer using the paddle attachment, mix together flour, 1 ½ cups sugar, almond flour and ½ tsp salt. Add butter and mix until just combined and starts to look like peas. Transfer to ½ sheet pan and cook until golden brown, stirring and breaking up any large clumps about ½ way through, for about 13 – 15 minutes. Remove from oven and again, break any large clumps up and let cool.
Divide the apple mixture evenly among bowls and top with streusel. Add some ice cream or whipped cream if desired.
