March 3, 2015, Costa Mesa, Calif.--Charlie Palmer at Bloomingdale's will be transitioning to a new concept—Holstein’s Shakes & Buns—effective May 2, 2015. The restaurant space located at 3333 Bristol Street within Bloomingdale’s at South Coast Plaza will undergo a period of reconceptualization and refurbishing to allow for design changes and will reopen as Holstein's in late Summer 2015. Chef Palmer says of the change, “We truly appreciate the amazing support of our patrons and the Orange County community throughout the years and look forward to serving them at Holstein's later this year. A very special thanks to Bloomingdale’s, South Coast Plaza, and the Segerstrom family—particularly the late Henry Segerstrom--for being such integral partners and welcoming us with open arms into this incredible community."

Holstein's, owned and operated by Block 16 Hospitality, has seen incredible success in its first Las Vegas location inside The Cosmopolitan of Las Vegas. Holstein’s brings fun back into eating out, with creative menu items including delightful specialty burgers, salads for those seeking greener pastures and smaller bites for grazers, as well as its signature “Bam-boozled” milkshakes of boozy proportions. Holstein’s Corporate Executive Chef Anthony Meidenbauer and his culinary team unabashedly inject attitude into their riffs on traditional burgers, milkshakes, snacks and appetizers, all with a funky homegrown approach.
