CHEF: Chef de Cuisine Jason Plourde worked at Mandarin Oriental Hotel in San Francisco during the time Charlie Palmer was consulting chef. Seven years after Plourde was promoted to sous chef, the Florida Culinary grad headed to Manhattan to direct the kitchen at Astra, the east coast catering arm of the Charlie Palmer Group.
