Top Ten Best New Restaurants of 2008
Charlie Palmer at the Joule
Chef-entrepreneur Charlie Palmer, whose company operates more than a dozen venues around the country, played his cards shrewdly by not importing another steakhouse concept to Dallas. You can certainly hunker down on a pedigreed slab of beef, but on-site executive chef Scott Romano directs the menu in myriad directions, from artful kampachi sashimi with pickled celery and house-made capicola to a classic rendering of skate wing with capers and brown-butter-glazed squash. Master sommelier Drew Hendricks left the restaurant midyear but was ably replaced by Brandan Kelley: The inventive, playful wine program hasn't slipped a bit.
