Chef reveals recipe for the irresistible Brown Sugar Cake at Charlie Palmer at Bloomingdale's in Costa Mesa.
Here's a dessert that is so delicious it makes my stomach rumble just to think about it. The nutty butter cake is warm and smothered in a butterscotch-toffee-like blanket. It's a little piece of heaven.
The Dish: Brown Sugar Cake With Vanilla-Braised Pineapple, Coriander Caramel, Toasted Vanilla Ice Cream and Brown Butter Foam ($10)
The Restaurant: Charlie Palmer at Bloomingdale's at South Coast Plaza in Costa Mesa
The Pastry Chef: Maren Henderson is a graduate of the New England Culinary Institute in Vermont. She has worked in other prestigious kitchens in Orange County, including French 75 and The Loft at the Montage Resort & Spa (both in Laguna Beach), as well as the now-closed Aubergine in Newport Beach and Troquet in Costa Mesa.
"I like the fact that there is room for experimentation," Henderson says when asked why she likes working with desserts. "There are a lot of technical things that you need to understand, but once you understand those things it is exciting to see how to change things to create something really interesting."
