Aureole makes epicurious.com Top Restaurants 1995-2010

Charlie Palmer blazed the trail west to Vegas when he launched Aureole Las Vegas at the Mandalay Bay. Keeping things appropriately flashy, Adam Tihany's design features an entrance staircase that hugs a 42-foot-high wine tower replete with "wine angels" grabbing bottles via lightning-fast hoists. Yet it is Aureole's seasonal American menu that has kept diners coming back.
